Another super yummy pasta recipe from my sister-in-law Cassie. It’s adapted from a pampered chef recipe, but I can never follow a recipe to a T so I’ve altered it a bit and it’s soooo easy and yummy.
1 pkg (20 oz) cheese-filled tortellini
1 pkg (6 0z) fresh baby spinach leaves
1 8 0z piece cooked ham steak (you could you cubed ham also)
1 large red bell pepper
1/4 cup butter (do not use substitute margarine)
1. Cook Tortellini according to package
2. Dice ham and red pepper and place spinach in a colander
3. Add butter to skillet; heat over medum heat 5-7 minutes or until butter is a deep brown color, occasionally swirling skillet. Immediately add bell pepper. Reduce heat to low; add ham and garlic.
4. Pour tortellini in colander over spinach and add to butter mixture and serve.
I added one clove of garlic and I also cooked ham before I added it so it was a little brown.
I think I’d add some sauteed mushrooms next time and maybe some onion and some sort of parmasan reggiano cheese on top.
